Presenting… “Chicken alla Traditrice” (Chicken of the Cheater!)

Why be faithful to plain old pizza night when you can have a scandalous, low-carb affair with this masterpiece? We take everything you love about Friday night—the melty cheese, the saucy marinara, the cute pepperoncinis—and we slap it right onto a juicy chicken breast that’s been coated in the gloriously crunchy, perfetto crust of crushed Quest Pizza Chips.

It’s a little weird. It’s absolutely wonderful. And it’s 100% what’s for dinner tonight. Your actual pizza will never have to know.

INGREDIENTS (For the Big Secret)

  • 3 chicken breasts (about 1.5 lbs) – slice them in half to make 6 cutlets, you’ll thank me later

  • 3 bags Quest Pizza Tortilla Style Protein Chips, crushed into a fine dust of deliciousness

  • 2 eggs, whisked like you’re angry at them

  • 2 tbsp gluten-free flour (or regular, we don’t judge)

  • 6 tbsp marinara sauce (the good stuff, not the jar from 2019)

  • ¾ cup shredded mozzarella cheese

  • ¼ cup mini pepperonis (because everything is cuter when it’s mini)


THE METHOD (The “How-To” of the Affair)

  1. Preheat the Oven: Get your oven nice and hot, to 400°F (200°C). Line a baking sheet with parchment paper. Non stick, per favore!

  2. The Breading Station: Get three shallow bowls. In one, put the flour. In the second, the angrily whisked eggs. In the third, the gloriously crushed Quest Pizza chips. This is your path to flavor town.

  3. The Coating: Take each chicken cutlet. First, give it a little dusting in the flour. Then, a dip in the egg wash—make sure it’s fully covered. Finally, press it firmly into the crushed chips until it’s wearing a full, crunchy pizza jacket. Bellissimo!

  4. First Bake: Place your beautifully coated chicken on the prepared sheet and bake for 20-25 minutes, until cooked through and gloriously golden.

  5. The Grand Finale: Take the chicken out. Now, the toppings! Smear on that marinara, shower it with mozzarella, and artfully place those cute little pepperonis.

  6. Melt It! Pop it back in the oven for just 5 more minutes, until the cheese is bubbly and melted and you can’t stand it anymore.
