You know that saying, “if it ain’t broke, don’t fix it”? Generally, we agree, however on this case, we took the very non-broken recipe for blueberry muffins and made it even higher.

How?

By making them with Vanilla Shakeology.

Blueberry Muffins

Servings 3 servings, 2 muffins every

  • Muffin liners 
  • Nonstick cooking spray 
  • 1
    giant
    ripe banana, ideally with brown spots 
  • 3
    giant
    eggs, flippantly overwhelmed
  • ¼
    cup / 60 ml
    unsweetened almond milk
  • 3
    scoops
    Vanilla Shakeology 
  • 1
    Tbsp.
    coconut sugar 
  • 1
    tsp.
    baking soda
  • ½
    tsp.
    floor cinnamon
  • 1
    cup / 150 g
    recent blueberries

  1. Preheat oven to 350° F (180 °C). Line a muffin pan with 6 muffin liners; flippantly coat with spray. Set apart. 

  2. Add banana to a medium mixing bowl; mash with a fork. Add eggs and almond milk; combine properly. 

  3. Add Shakeology, sugar, baking soda, and cinnamon. Stir to mix. Add blueberries; gently fold into batter. 

  4. Divide batter evenly amongst ready muffin liners. 

  5. Bake for 20 to 25 minutes, or till a toothpick inserted into the middle comes out clear. 

  6. Transfer muffins to a cooling rack; let cool for five minutes. Serve instantly, or retailer refrigerated in an hermetic container for as much as 4 days, or frozen for as much as 1 month.
