Double Berry Shakeology Muffins

These little muffins pack an enormous berry-flavored punch with recent strawberries, raspberries, AND Strawberry Shakeology.

Double Berry Shakeology Muffins

These little muffins pack an enormous berry-flavored punch with strawberries, raspberries, and Strawberry Shakeology.

  • Muffin liners 
  • Nonstick cooking spray

    scoops
    Strawberry Shakeology 
  • ¾
    cup / 70 g
    almond flour

  • tsp.
    baking powder

  • tsp.
    floor cardamom
  • ½
    cup / 120 ml
    unsweetened almond milk
  • 3
    giant
    eggs
  • 2
    Tbsp.
    ghee (natural grass-fed, if attainable), melted
  • 1
    Tbsp.
    pure vanilla extract 
  • ¼
    cup / 40 g
    recent raspberries
  • ¼
    cup / 30 g
    chopped recent strawberries

  1. Preheat oven 350° F (180 °C) 

  2. Line a muffin pan with 6 muffin liners; flippantly coat with spray. Set apart. 

  3. Mix Shakeology, almond flour, baking powder, and cardamom in a medium bowl. Set apart. 

  4. Combine almond milk, eggs, ghee, and extract in a big bowl; combine properly. 

  5. Add dry combination to liquid combination; stir till properly mixed. Gently fold in raspberries and strawberries.  

  6. Evenly divide batter amongst ready muffin cups, filling every roughly ¾ full.  

  7. Bake for 25 minutes, or till tops are golden brown and toothpick inserted into the middle comes out clear. 

  8. Transfer muffins to a cooling rack. Serve instantly, or refrigerate in an hermetic container for as much as 4 days or freeze for as much as 1 month.
